Without seeing the fridge freezer it is very hard for me to say exactly what the problem is, but what I will tell you is I have changed the circuit boards on many occasions and it is rectified the problem and as they're not expensive it is well worth the effort.
The only things that would cause this problem are the circuit board or the NTC sensors.
Have a look at how I fix fridge freezer with our monitoring system and then you will understand with refrigeration it takes time for things to happen and this is why we have to monitor them over a couple of days.
